Digestive biscuits are made with whole grain and oats. They are way different from the normal biscuits which usually are made with refined flour and lack the dietary fiber.
Digestive biscuits are good in between the meals snack. These aren’t difficult to bake and by baking them at home,one can have complete control over what goes in the biscuits.
I have made them with whole grain,oats, khandsari desi sugar and butter. Khandsari sugar is unrefined mineral rich sugar. It can be easily replaced by any other type of sugar.The biscuits turned out amazingly crispy and yum. I have made 32 biscuits from this quantity.
Wheat Flour 140 g
Oats 80 g
Desi Sugar 100 g
Butter 80 g
Salt a pinch
Milk 4 tbsp
Baking Powder 1 tsp
Vanilla essence 1 tsp
Grind the oats finely in mixer grinder. In a bowl take wheat flour,ground oats,baking powder and salt. Give it a good mix with a spatula.
Take butter and sugar in a bowl and whisk them together. This process takes 4-5 minutes. You can use an electric whisk as well.
This is how my butter sugar mixture looks after beating.
Now mix dry ingredients to butter sugar mix in two parts. You can use your hands to mix. But don’t knead. Kneading leads to gluten formation. Gluten formation results in chewy cookies.
Add 4 tbsp of milk to bring the dough together. Divide the dough in two parts. Preheat the oven at 150 C.
With the help of a rolling pin roll out the dough on a surface . Thickness should be approx 1/8 “. Using a cookie cutter, cut round biscuits.
Prick them with a toothpick. Arrange them in a baking tray and bake for 18 minutes or till edges begin to brown.
Allow them to cool on a wire rack and save in an airtight container.They remain for 10 days.
You can vary the ratio of oats and whole wheat flour. I had only 80 g oats in my box.
As I want my bakes to be healthier,I avoid refined flour. You can replace half wheat flour by refined flour. This will make the biscuits crunchier.
