If you are a novice to bread baking, this is the recipe for you. Baking with all-purpose flour is as easy as a breeze. Yeast can be moody, however, if you learn to handle it you get wonderful results.

I have baked these buns for a neighbour and friend who somehow likes her bread more if it has the traditional texture and colour.

Earlier, I had baked a loaf with refined flour. You can find the recipe here.

Another recipe you must try is whole wheat pull-apart dinner rolls.

Prep Time 1 hr 45 mins
Cook Time 20 mins
Total Time 2 hrs 30 mins
Course Appetizer, Main Course
Cuisine American, Indian
Servings 8 buns

Ingredients

  • 400 g All purpose flour
  • 1.25 cup + 2-3 tbsp Water
  • 20 g Milk powder
  • 1 tsp Instant yeast
  • 1 tbsp Jaggery or brown sugar
  • 1.5 tsp Pink salt
  • 1/4 cup Any oil or butter
  • 1 tbsp Milk for milk wash
  • 1 tsp Black and white sesame seeds for garnish
  • 1 tsp Melted butter to apply after baking.

Instructions

  • Take 1/4 cup of lukewarm water and add jaggery powder to it. Mix it and add yeast. Mix thoroughly and keep it aside to bubble.
  • In a big bowl, take flour and add salt, milk powder. Mix it with a spatula.
  • Add bubbled yeast mixture and start making dough by adding water gradually. You may need a little lesser or more water. Don't add the entire quantity in one go.
  • When the dough comes together, smear it with oil. Shift the dough on the counter and start kneading it gently. The process takes 6-8 minutes. The dough will bounce back on poking when ready. You can do the windowpane test as well.
  • Keep the dough for the first proofing in a big bowl, smeared with oil. Applying oil on the dough prevents it from drying. Cover the bowl with a kitchen towel.
  • Wait until the dough doubles in size. Mine took about an hour.
  • Grease a baking tray with oil or line it with parchment paper.
  • Punch the dough and divide into 8 equal parts.
  • Shape the dough into balls.
  • Place then on the parchment paper-lined tray at a distance. Flatten them with your fingers.
  • Cover the tray with a kitchen towel and keep for the second proofing which will take 20-25 minutes. Proofing time may vary depending upon the weather at your place.
  • Meanwhile preheat the oven at 190 C for 10 minutes.
  • Brush the buns with milk and sprinkle with sesame seeds.
  • Bake the buns for 20-25 minutes or until the tops have browned nicely.
  • Apply butter and cool them on a wire rack. Serve the way you like.

Notes

Add water gradually.
You can use half milk, half water to knead the dough and skip milk powder.
Baking time may vary.
